Since backup is important in any migration, we first deal with setting up Apple Watch with backup.
Step #1: Launch Apple Watch app on your iPhone.
Step #2: Tap on My Watch.
Step #3: Next, tap on Apple Watch.
Step #4: Here, you need to unpair or remove your old iPhone, which was paired with the Apple Watch; tap Unpair Apple Watch option. This will remove and delete your Apple Watch. Moreover, this action will backup your iPhone and restore Apple Watch to Factory settings.
Step #5: Tap your language of choice once Apple Watch is removed and it reboots to the language screen.

Step #1: First off, reset Apple Watch to factory settings by tapping on Settings → General → Reset → Erase All Content on your smartwatch.
Step #2: You will see language screen once your watch is restored and then rebooted. Now tap your choice of language.
Step #3: Launch Apple Watch app on your iPhone X or iPhone 8, 8 Plus and start pairing procedure.
Step #4: Tap Set Up as New Apple Watch once the watch is paired.
Step #5: Select Left or Right so that Apple Watch gets to know which wrist you are wearing it on.
Step #6: iTunes agreement will be seen; tap on Agree.
Step #7: Log in to Apple ID when you are asked.
Step #8: Now you will be provided three sets of information on Location Services, Siri, and Diagnostics respectively. Tap on OK one after another.
Step #9: Select a passcode for Apple Watch; note that you can select a long passcode for better security. Make sure that you enter passcode on watch and not on iPhone.
Step #10: IF you want your iPhone to unlock Apple Watch, select the option here.
Step #11: Again, you need to make a choice whether or not you want to install all available apps automatically. If you decline, you will have to download/install manually with the Apple Watch app.
