There are two possible solutions to this issue of letter i predictive text bug: you can use text replacement or simply download and use third-party keyboards on your iPhone or iPad.
How to Fix Letter “i” AutoCorrect Bug in iOS 11.1 on iPhone and iPad
Step #1: Open Settings on your iPhone or iPad.
Step #2: Next, tap on General.
Step #3: Now you need to tap on Keyboard.
Step #4: Here, tap on Text Replacement.
Step #5: Then you are required to tap on (+) icon from the top right corner.
Step #6: Enter I for Phrase.
Step #7: Enter i for Shortcut.
Step #8: Finally, tap on Save.

Third-party keyboards cannot access iOS autocorrect system, and therefore, you may not have to face this bug. So, if text replacement fails to work on your iPhone or iPad, download and install third-party keyboards from App Store.
